No-Bake chocolate PB truffles by Max La Manna
Makes 8-10
140g smooth peanut butter
14g cocoa powder
65g maple syrup
85g peanuts
35g brown or coconut sugar
1 tsp vanilla extract
1/2 tsp salt
100g dark chocolate, meted
50g coconut flour
Stir and combine the peanut butter, maple syrup, cocoa powder, vanilla extract, coconut flour and salt in a bowl. Roll a small amount of the mixture with your hands to form a ball and set aside on lined baking sheet.
Roughly blend the peanuts and sugar and place in a bowl and set aside.
Take the truffle and dip into the melted chocolate (watch the video to see how I remove any excess chocolate).
Then immediately place the truffle into the sugar/nut mixture and coat everything evenly. Place back on the lined baking sheet.
Place in the fridge to cool for 20 minutes.
